Best veg dinner ever!!

Zucchini Boats!!

Fresh Zucchini sliced in half lengthwise
5-8 cherry tomatoes sliced in half (or however many it takes to cover the zuch)
1 clove of garlic, crushed
1/2 T of EVOO
Mozza Cheese, shredded (you can easily omit this if you don’t eat cheese)

Mix EVOO and garlic, ad a pinch of salt if desired, brush inside of zuch with oil mixture. Line zuch with halved cherry tomatoes.

Throw in the over at 400 for about 10-15 minutes

Remove from oven, spread shredded cheese evenly over and return to oven until cheese is melted.

Serve warm, but allow to cool.

Oh. My. God. So good. Make extras… honestly.
