Flourless, Sugar-free PB Cookies

Hallelujah! I found my healthy cookies! Woot woot!!

Here it is folks. Let me know what you think of them.

Flourless, Sugar-Free Peanut Butter Cocolate Chip Cookies
makes about 2 dozen cookies

1 cup creamy natural peanut butter, unsalted (preferably organic)
1/3 brown rice syrup (can adjust to suit your taste)
1/4 cup flax seed, mostly ground
1 egg
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/2 cup chocolate chips

(Optional, lightly sprinkle with IN THE RAW sugar for a little crunch and added sweetness. Obviously this removes the “sugar-free” status, but it’s still much better than most alternatives!)


Preheat your oven to 350F. Grind whole flax seed in processor for a couple seconds. In a medium bowl, mix together the first five ingredients until a thick, gooey batter forms, then fold in the chocolate chips. Using a tablespoon drop batter onto a baking sheet lined with parchment paper and flatten slightly. (Optional: Sprinkle lightly with RAW sugar)

Bake for 8-10 minutes.

Once the cookies are lightly browned, remove the pan from the oven, and allow the cookies to rest on the baking sheet for 10 minutes. They will firm-up as they rest!
